Steps to prepare

Vanilla Flan Heat
400 ml cream, granulated sugar, and vanilla pulp in a saucepan until sugar is completely dissolved. Remove from heat and let cool, covered, for about 30 minutes. Soak gelatin in cold water for 10 minutes, squeeze out, and dissolve in some Grand Manier. Then add to the perfumed cream and pour into a deep insert. Refrigerate for about 3-4 hours.

Granola
Preheat the oven to 180 °C. Line a baking tray with baking paper. Put almonds in a blender, grind, and push down with the spatula. Add oats, quinoa, sunflower seeds, salt, maple syrup, and oil. Mix using the spatula for 30 sec/left run/speed 2. Pour the mixture evenly onto the prepared baking sheet.
Bake granola on the middle rack at 180 °C for approx. 20-30 minutes until golden brown, turning every 5 minutes so that the mixture browns evenly. Then allow the granola to cool and store it in a dry place.

Chocolate spuma
Melt the chocolate over a water bath. Add the remaining ingredients and heat briefly. Pour the mixture through an iSi funnel & sieve into a 0.5 L iSi Gourmet Whip, screw on 1 iSi Cream Capsule, and shake vigorously 5-7 times. Chill in the refrigerator for 1-2 hours.
For easier portioning, let the iSi unit stand at room temperature for 10 minutes before serving, or hold the unit briefly under hot water.

Portion into a liquid nitrogen bath, dust with cinnamon sugar and serve on top of vanilla cream, with granola, some raspberry coulis, and fresh berries.
